It all started in 2020 when our founder, Chef Marco "The Cheese Master" Rodriguez, had a vision. After working in some of the finest restaurants across the country, he realized that the world needed a food truck that would make cheese the star of every dish.
The name "CHEESEQUAKE" came to him in a dream - a powerful force of nature that would shake up the food truck scene with the most incredible cheese pulls anyone had ever seen. And thus, our cheesy revolution began!
Starting with just a small truck and a big dream, we've grown into one of the most beloved food trucks in the city, known for our innovative cheese combinations and unforgettable dining experiences.
